Truffled mushroom mac n cheese
Ingredients
- 40g butter
- 40g plain flour
- 700ml whole milk
- 1 tsp Dijon mustard
- 200g full flavour basics cheddar cheese, grated
- 50g Italian hard cheese, finely grated
- 6 tsp mild truffle oil (we used La Espanola)
- 1 tbsp olive oil
- 250g pack chestnut mushrooms, cleaned and sliced
- 1⁄4 x 20g pack thyme, leaves only
- 1 garlic clove, very finely chopped
- 250g macaroni
- 25g dried breadcrumbs
