Ingredients
- 5 tbsp. extra-virgin olive oil
- 1 lb. short ribs, bone in
- 3 cups beef stock
- 3 cups chicken stock
- Salt and freshly ground black pepper
- 1 clove garlic, peeled and minced
- 4 small shallots, peeled and minced
- 1 rounded cup carnaroli or arborio rice
- 1⁄2 cup cold dry white wine
- 2 tbsp. finely chopped parsley
- 1⁄4 cup freshly grated parmigiano-reggiano
- 1 tbsp. brandy
