Ingredients
- For the filling:
- 1 1/2 pounds broccoli (about 1 medium bunch)
- Water as needed
- 4 scallions, roughly chopped
- 3-4 garlic cloves, minced
- 1 tablespoon minced or finely grated fresh ginger
- 2 tablespoons cornstarch
- 1 tablespoon hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon unseasoned rice vinegar
- 1 teaspoon Sriracha or other hot sauce, or to taste
- Salt to taste
- To finish the potstickers:
- about 60 round dumpling wrappers or potsticker wrappers, thawed if frozen
- 1 tablespoon cornstarch
- 1/4 cup water, plus more for steaming
- Peanut oil or other neutral oil, for frying
- 2 tablespoons soy sauce
- 2 tablespoons unseasoned rice vinegar
- 1 tablespoon thinly sliced green scallion tops
