Life of Chicken Pot Pi
Ingredients
- 1 tablespoon olive oil
- 3/4 pound boneless, skinless chicken thighs, cut into 1/2-inch pieces
- 2 celery stalks, chopped
- 2 medium carrots, peeled and chopped
- 1 medium potato, peeled and cut into 1/2-inch cubes
- 1/2 large yellow onion, chopped
- 1 teaspoon kosher salt
- 3/4 cup dry white wine or water
- 2 garlic cloves, minced
- 1/2 cup snap peas, cut in half
- 1/2 teaspoon chopped fresh rosemary
- 5 tablespoons unsalted butter
- 1/2 cup all-purpose flour
- 4 cups chicken stock
- 1/4 cup milk
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley
- 1 refrigerated pie crust, thawed if necessary
- 1 egg, beaten with 1 tablespoon milk (egg wash)
