Papas Italian Potato Pepper Frittata
Ingredients
- 1/4 cup extra virgin olive oil
- 8 medium russet potatoes (4" or smaller), peeled and sliced 1/4" thick
- 2 large red peppers, no seeds, sliced 1/4" thick
- 1 large sweet onion, peeled, sliced 1/4" thick
- 1/4 cup fresh basil, chiffonade
- 1/4 cup fresh italian parsley, minced fine
- 4 slices cooked bacon or prosciutto, cut in 1" pieces
- 8 large eggs, beaten
- 1/4 cup grated parmigiano reggiano cheese + more for topping at the table
