- For the filling:
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 3 garlic cloves, chopped
- 1 chili pepper, seeds removed and diced
- 1 1/2 teaspoons Kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon caraway seeds
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1 teaspoon smoked paprika
- 2-3 large tomatoes, about 1 pound, diced
- 2 tablespoons tomato paste
- 2 teaspoons honey
- 1 teaspoon cider vinegar
- 8 ounces spinach, chopped
- 2 ounces feta cheese, crumbled
- 4 small eggs, plus one more to use as egg wash
