- 1/4 cup fresh Cilantro, coarsely chopped
- 2 cloves Garlic, coarsely chopped
- 1/2 cup raw Cashews
- 1/2 cup extra virgin olive oil
- 1/4 cup lemon juice
- salt & pepper to taste, for pesto and omelette
- 2-3 large eggs
- 1 tablespoon oil of your choice (for cooking the omelette)
- 1 tablespoon grated parmesan cheese
- 1 tablespoon milk or heavy cream
