Chipotle Corn Souffle
Ingredients
- 6 eggs
- 1/2 cup olive oil + 1 tbsp
- 1/2 yellow onion {chopped}
- 3 1/3 cups frozen sweet corn
- 1 can creamed corn
- 2/3 cup all-purpose flour
- 1/2 cup fine corn meal
- 1 tbsp baking powder
- 2 Chipotle Peppers in Adobo Sauce
- 4 tsp Adobo Sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- Optional
- 3/4 cup shredded sharp cheddar cheese
