Bruleed Bourbon Buttermilk and Bacon Tart
Ingredients
- For the Crust
- 1 3/4 cups flour
- 7 tablespoons chilled unsalted butter
- 1-2 tablespoons candied bacon drippings
- 2 tablespoons bourbon, chilled
- 2 tablespoons ice water
- For the Tart
- 5 slices regular-cut bacon
- 2 tablespoons dark brown sugar
- 2 large eggs, plus 2 egg yolks
- 3/4 cup plus 2 tablespoons white sugar or sugar in the raw
- 3 tablespoons flour
- 3 tablespoons unsalted butter, melted
- 1 1/2 cups chilled buttermilk
- 3 tablespoons bourbon (I use Bulleit)
