- 8 tablespoons cold, unsalted butter, cut into pieces
- 4 tablespoons ice water

- 5 slices bacon, chopped into 1/2-inch pieces
- 2 pears, peeled (I used red d'Anjou)
- 1 lemon
- 1/4 teaspoon cinnamon
- 1 teaspoon sugar
