- 4 pounds beef brisket
- 1 large cinnamon stick
- 12 whole allspice berries
- 12 whole juniper berries
- 4 dried bay leaves, torn into pieces
- 1 tablespoon coriander seeds
- 1 tablespoon dried thyme
- 2 teaspoons whole black peppercorns
- 1 gallon water
- 1 1/2 cups Diamond Crystal kosher salt
- 1 cup granulated sugar
- 6 garlic cloves, smashed and peeled
- 4 teaspoons TCM or pink curing salt**
- 1 teaspoon ground cloves
- Whole-grain mustard and hearty rye bread, for serving (Swiss cheese and sauerkraut are optional)
