- 1/2 cup mashed potatoes at room temperature (just unseasoned potatoes, i.e. Yukon Gold potato, baked and peeled, then finely mashed)
- 1 1/4 cups all purpose flour
- 1 1/3 cups plus 1 tbsp bread flour
- 1 1/4 teaspoons instant yeast (I recommend RedStar Platinum Instant Yeast)
- 2 tablespoons plus 2 1/2 tsp sugar
- 1/4 cup plus 2 1/2 tbsp unsalted butter, divided
- 1/2 cup plus 31/2 tbsp milk, slightly warm
- 1 egg and 2 egg yolks, divided
- 1 3/4 teaspoons coarse sea salt, divided
