Beer Steamed Mussels with Bacon
Ingredients
- 1 large shallot, minced (about 1/2 cup)
- 1/4 cup chopped parsley leaves
- 2 pounds fresh mussels, scrubbed clean and beards removed
- 2 teaspoons Dijon mustard
- 3 sprigs fresh thyme
- 4 medium cloves of garlic, minced (about 4 teaspoons)
- 4 strips of bacon, chopped
- Crusty bread, for serving
- Salt and freshly ground black pepper
