- 1 small onion (finely chopped)
- 1 red bell pepper (diced)
- 2 cups shredded cheddar cheese
- 8 large eggs
- 1/2 cup milk
- Salt and pepper (to taste)
- 1/4 cup chopped fresh parsley (optional)
