Ingredients
- 1 cup coarse ground cornmeal
- 2 garlic cloves, crushed
- 1/2 cup corn kernels (fresh or frozen)
- 2 cups chopped mushrooms (I prefer shitake, maitake, enoki, etc)
- 1 cup kale, chiffonade
- 1/2 cup parmigiano reggiano (or other hard aged cheese), grated
- 2.5-3 cups water
- 1 teaspoon dried thyme (or fresh, if you've got it)
- salt
- freshly ground pepper
- olive oil
