- 2 Japanese eggplants or 1 globe eggplant

- 2 teaspoons liquid smoke (optional)
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1 teaspoon chipotle powder
- 1/2 teaspoon freshly ground black pepper
- Kosher salt (fine sea salt also works)
