Beer bacon mussels with Savoy cabbage
Ingredients
- 2 kg live mussels, scrubbed & prepared (discard any that are open)
- 6 rashers smoked bacon, chopped
- 4 large shallots, finely chopped
- 250 ml Hoegaarden wheat beer
- ½ Savoy cabbage, stalks removed & shredded
- ½ x 25g pack flat-leaf parsley, roughly chopped
- Squeeze of lemon juice
- Crusty bread to serve
- 3 garlic cloves, peeled & finely chopped
