Easy Gazpacho Cold Spanish Soup
Ingredients
- 2 green bell peppers (seeded and coarsely chopped)
- 1 English cucumber (unpeeled and coarsely chopped)
- 1 sweet onion (peeled and coarsely chopped)
- 14.5 ounces diced tomatoes (canned)
- 10 ounces diced tomatoes and green chilies (I like Rotel)
- 2 cloves garlic (chopped)
- 4 cups tomato juice
- 4 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- ½ teaspoon Kosher salt
- ¼ teaspoon ground black pepper
