Fluffy Carrot Cake

- 1/2 c. applesauce
- 2 tsp. pure vanilla extract
- 1 c. granulated sugar
- 1 c. firmly packed dark brown sugar
- 2 c. all-purpose flour
- 1 tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 4 c. grated carrots
- Whipped Cream Cheese Frosting (recipe below)
- 1 c. toasted sweetened coconut
- 1 package cream cheese
- 1 c. confectioners' sugar
- 1/2 c. heavy cream
