- 1 pound beef stew meat, cut into cubes
- 2 cups baby red potatoes, quartered
- 1 medium carrot, cubed
- 3 cloves garlic, minced
- 1 15 ounce can stewed tomatoes
- 1 can beef broth
- 1 4 ounce can diced green chilis
- 1 cup crushed tortilla chips
- 1/2 cup sliced green olives, either pimento or garlic stuffed
- salt and pepper to taste
