Ingredients
- 1 pound cod filets, cut into 2-inch wide strips
- 1/2 shallot, minced
- 1 clove of garlic, minced
- 1 cup coconut milk
- 1/2 large lemongrass stalk, chopped
- 1 teaspoon lime zest, finely shredded
- 3/4 teaspoon red curry paste
- 1 teaspoon coriander seeds
- 6 cardamom pods
- 8 basil leaves, plus some more for garnish
- 1 tablespoon fish sauce
- 3 teaspoons lime juice
- Two 12oz bottles wheat beer (I used Blue Moon)
- 2 tablespoons vegetable oil
- Salt
