Ingredients
- 2 pounds cubed beef stew meat
- 2 tablespoons unsalted butter
- 2-3 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 teaspoon dried thyme
- 1 tablespoon tomato paste
- 1 cup red wine
- 2 cups beef broth
- 1 bay leaf
- 1 tablespoon unsweetened cocoa (preferably dutch-processed and/or best quality)
- 1 inch piece of orange zest (run a vegetable peeler lightly across the orange's outer peel and remove orange zest in strips)
- 1 cinnamon stick
- 4 carrots, peeled and chopped (optional)
- 1 cup frozen peas (optional)
- salt and pepper to taste
