Ingredients
- 6-8 thick-cut pork chops
- ¼ cup salt
- ¼ cup sugar
- 2 cups water
- Freshly-ground black pepper
- 2 tbsp. olive oil
- 3 peaches, sliced in half and pitted
- 4 peaches, pitted, peeled and roughly chopped
- ¾ cup firmly-packed light brown sugar
- 2 tbsp. honey or corn syrup
- ½ cup bourbon
- 1 tsp. salt
- ½ tsp. freshly-ground black pepper
