- 1 inch piece ginger, peeled, coarsely chopped
- 3 inch piece lemongrass, roughly sliced

- 1 teaspoon coarse salt
- 1/2 teaspoon turmeric
- 2 teaspoons ground coriander
- 6 ounces rice-stick noodles, cooked
- Scallions, sliced 1/4 inch thick, for garnish
