- 2 tablespoons minced fresh ginger (3-inch piece)
- 1 1/4 teaspoons kosher salt (or a teaspoon of sea salt )
- 1 teaspoon sweet paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne
- 1/4 teaspoon freshly ground black pepper
- Pinch saffron threads
- 1 cup dried breadcrumbs
- 2 eggs
- 1/4 cup fresh cilantro , chopped
- 2 tablespoons fresh mint , chopped
- 1/2 cup ketchup
- 1/4 cup pomegranate molasses
- 1/2 teaspoon chipotle chili powder , more to taste
