- 4 tablespoons butter, cut into 1/2-inch cubes and chilled thoroughly
- 1 1/2 cups aged Vermont cheddar, cut into 1/2 inch cubes
- 1 small sweet potato, roasted and peeled
- 6 strips cooked bacon, cooled and crushed finely in a food processor
- 3 ounces creme fraiche
- 1/3 cup sliced scallions, sautéed and cooled
- a generous pinch coarsely ground black pepper
- 2 ounces whole milk
- nonstick spray
- 3 tablespoons almond honey
- fine sea salt
- 1 stick butter, softened
