- 1/2 pound ramps, whites finely sliced, greens roughly chopped
- 2 cups roughly chopped fresh napa cabbage
- 1/2 teaspoon kosher salt
- 4 ounces bacon, roughly chopped
- 4 ounces fatty ground pork
- 1/4-inch disk fresh ginger, roughly chopped
- 1 teaspoon soy sauce
- 2 teaspoons sugar
- 2 teaspoons toasted sesame oil
- 1 tablespoon Shaoxing wine or dry sherry
- To Serve:
- 2 tablespoons soy sauce
- 2 tablespoons Chinkiang vinegar (or rice vinegar)
- 1 teaspoon sugar
- 1 teaspoon finely minced ginger
- Vegetable oil for frying
