Ingredients
- 1 tsp olive oil
- 1 cup chopped white onion
- ¾ tsp dried oregano
- ⅛ tsp red pepper flakes
- 2 cloves garlic, minced
- 1½ cups low sodium chicken broth
- ⅔ cup dried lentils
- ⅔ cup crumbled feta cheese (I omitted)
- ⅓ cup bread crumbs
- 1 tsp Italian seasoning (I omitted)
- ½ cup grated carrot (also added a bit of grated zucchini)
- ⅓ cup wheat germ (I omitted)
- ¼ cup flat leaf parsley, chopped (I subbed cilantro)
- salt & pepper, to taste
- cooking spray
- 4 buns or pitas
- spinach or romaine
- tomato slices
- for the tzatziki
- 1 cup grated cucumber, peeled before grated
- 1½ cups plain yogurt (if you prefer a thicker sauce, use Greek yogurt)
- ½ tsp salt
- 2 cloves garlic, crushed
- 1 tsp olive oil
- 2 tsp chives
