Ingredients
- 2 packages of udon noodles
- 1 to 2 pork chops (depending on size), sliced into thin strips
- 4 or 5 cremini mushrooms, cleaned and sliced
- ½ red bell pepper, sliced
- ½ a small Napa cabbage, sliced
- 2 tablespoons soy sauce
- 1 tablespoon Mirin (Japanese rice wine)
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 2 green onions, chopped
- 1-inch ginger, sliced then chopped
- 2 carrots, cut into matchsticks
- ½ an onion, thinly sliced
- Bonito flakes or strips cut from a Nori sheet (optional but good if you can buy it)
