- 6 large egg yolks, lightly stirred till just blended, and placed in a large mixing bowl
- 5 ounces bittersweet chocolate (~70% cacao), chopped
- 3 tablespoons granulated sugar
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 tsp ground cardamom
- For the Whipped Cream
- 1/2 cup heavy cream
- 1 tablespoon sugar
- 1 teaspoon orange extract
- 1 teaspoon orange zest
- flaky sea salt
