Ingredients
- 735 grams Sweet Potato
- 425 grams Coconut Sugar
- 158 grams Coconut Oil
- 380 grams Chocolate Chips
- 1 teaspoon Vanilla Extract
- 710 grams Almond Flour
- 180 grams Cocoa Powder
- 99 grams Tapioca Flour
- 1 tablespoon Baking Powder
- 200 grams Chopped Walnuts
- 1 teaspoons Salt
Instructions
Roast sweet potatoes, then let the sweet potatoes cool completely.
In a standing mixer, mix sweet potatoes and coconut sugar on low speed until soft.
Put coconut oil and chocolate in a bowl and melt on low heat in double boiler.
Mix almond flour, cocoa powder, tapioca flour, baking powder, salt walnuts and set aside.
When chocolate and coconut oil have melted, add to sweet potato and coconut sugar.
Mix until well incorporated and scrape sides of bowl.
Add all dry ingredients and mix on speed 2. Scrape sides of bowl and mix until well incorporated.
Bake in the oven at 350 degrees for 45 minutes, no fan. Rotate pan halfway through.
