Ingredients
- 2 c flour
- 1-1/4 c granulated sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 c butter, softened
- 1 tsp lemon zest
- 2 eggs
- 3/4 c milk
- 1 tsp vanilla extract
- 2 c blueberries
- 4 Tbsp butter, melted
- 1/4 c flour
- 1/2 c brown sugar, packed
- 1/4 c granulated sugar
- Pinch of salt
Instructions
Aid stand mixer or hand mixer, first mix together flour, sugar, salt, and baking powder.
Finally, by hand, gently fold blueberries into batter.
Spoon batter into a well greased or lined muffin pan, filling each cup about two-thirds.
Bake for 20-25 minutes. The muffins will start to rise by this time.
Bake another 20 minutes or until a toothpick inserted in the center comes out clean. Enjoy!
