- 3 tablespoons olive oil
- 1 1/2 pounds ground beef

- 5 stuffed Spanish olives, chopped, plus 1 tablespoon olive brine
- 2 teaspoons fresh oregano leaves, minced, optional
- 1 bunch fresh cilantro, roughly chopped
- 1 cup vegetable oil
- 6 very ripe yellow plantains, peeled and cut into long strips (see Cook's Note)
- 4 large eggs, whisked with a pinch of salt
- 2 cups shredded mozzarella
