- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups half-and-half
- 1/2 cup grated Pecorino-Romano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon freshly ground nutmeg
- 4 slices Texas toast, toasted
- 1 large ripe tomato, sliced
- 4 slices thick-cut bacon, cooked until crisp
- Chopped fresh flat-leaf parsley, for garnish
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
