Belizean Stewed Chicken in the Instant Pot

Ingredients

• * 4 whole chicken leg (thigh and drumstick, separated into 8 piece)
• * 1 tbsp coconut oil
• * 2 tbsp recado rojo or achiote seasoning paste
• * 2 tbsp white vinegar
• * 3 tbsp worcestershire sauce
• * 1 cup sliced yellow onion
• * 3 clove garlic, sliced
• * 1 tsp ground cumin
• * 1 tsp dried oregano (mexican if you can get it!)
• * 1/2 tsp ground black pepper
• * 1 tbsp granulated sugar substitute (i used erythritol)**
• * 2 cup chicken stock
