- * 1 tsp fenugreek seed
- * 1/2 cup ground dried serrano chilie or other ground dried

- * 1/2 c paprika
- * 2 tbsp salt
- * 2 tsp ground ginger
- * 2 tsp onion powder
- * 1 tsp freshly ground cardamon
- * 1 tsp ground nutmeg
- * 1/2 tsp garlic powder
- * 1/4 tsp ground clove
- * 1/4 tsp ground cinnamon
- * 1/4 tsp ground allspice
- spiced butter:
- * 1 lb unsalted butter
- * 1/2 medium red onion, coarsely chopped
- * 1 garlic clove, minced
- * 1 piece ginger, peeled and finely chopped
- * 1 tsp fenugreek seed
- * 1 tsp ground cumin
- * 1 tsp cardamon seed
- * 1 tsp dried oregano
- * 1/2 tsp ground turmeric
- * 8 basil leaf
- other ingredient:
- * 2 medium red onion, diced
- * salt
- * 1/4 cup spiced butter or 4 tbsp (1/2 stick) unsalted butter,
- divided
- * 1/4 tsp ground cardamon, preferably freshly ground
- * 1/4 tsp freshly ground black pepper
- * 3 clove
- * 2 garlic clove, finely chopped
- * piece ginger, peeled and chopped
- * 1 tbsp berbere or chili powder
- * 2 1/2 cup chicken stock, divided
- * 1 4-5 lb chicken,, wing reserved for another
- use or you can buy leg quarter or thigh piece, etc (it's easier
- for me)
- * 1/4 cup dry red wine
- * juice of 1 lime
- * 2 hard boiled egg, peeled
