- 1 cup besan (Indian chickpea flour; see Cook's note)
- 2 tablespoons rice flour
- 3/4 teaspoon kosher salt, plus more for sprinkling
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ajwain (carom) seeds, optional (cumin seeds can be substituted)
- 1/8 teaspoon baking soda
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon lemon juice
- Canola or peanut oil, for deep-frying
- 1 yellow onion, cut into rings
- 2 cups curly kale, ribs removed, torn into 3-inch pieces
- 2 cups 1-inch cauliflower florets
- Ground black lime, for sprinkling
