- 1 Scotch bonnet chile (habanero) (seeded and chopped)
- 3 sprigs fresh thyme or 1 teaspoon dried
- 3 teaspoons fresh oregano leaves or 1 teaspoon dried
- 1 large bay leaf (broken in half)
- 1 tablespoon whole allspice berries
- 2 pounds raw cleaned calamari, body tubes and tentacles
- 4 slices bacon (diced)
- 2 large celery ribs (diced)
- 2 carrots (peeled and diced)
- 1 medium sweet onion, (diced)
- 1/2 cup diced green bell pepper
- 2 cloves garlic (minced)
- 4 cups fish stock or clam juice or a mixture of both
- 1 can (14 ounces) diced tomatoes, with juice
- 1 can (14 ounces) crushed tomatoes
- Juice of 1 lime
- 1 tablespoon Worcestershire sauce
- 1 tablespoon kosher salt
- 1 large red potato (peeled and cut into 1-inch diced pieces)
